
Ingredients
- 3x zucchini
- 1 cup Panko bread crumbs
- 2 TBS Garlic
- 1 cup Quinoa
- 2x Beetroot
- 1x Cucumber
- Salt and pepper
- Rocket
- 3x eggs
- 1/2 cup Greek yoghurt
- Lemon juice
- 1 tin chickpeas
- Garlic powder
Method
- Mix zucchini, garlic, chickpeas, bread crumbs salt/pepper, garlic powder and eggs in bowl. Place beetroot into preheated oven.
- Shape mixture into patties
- Place 2 cups of water with 1 cup quinoa into bowl place in microwave for 10 minutes
- Fry patties until golden brown
- Mix lemon juice, Greek yoghurt, garlic, salt and pepper in small bowl
- Plate cooked quinoa, fritters, rocket, roast beetroot, cucumber and yoghurt in bowl
