
Ingredients
- Hakubaku Soba Noodles - packet
- Shredded green cabbage - 1 cup
- Shredded carrots - 1/2 cup
- Spinach - 1 cup
- Avocado - 1
- Frozen edamame beans - 1/2 cup
- Obento rice wine vinegar or sushi seasoning - 1/4 cup
- Lee Kum Kee sesame oil - 2 tbsp
- Lee Kum Kee soy sauce - 2 tbsp
- 1 tbsp white sugar
- Sesame seeds, for garnish
Method
- Cook soba noodles according to packet directions. 3-4 minutes depending on how firm you like it. Drain and run under cold water
- Boil edamame beans in salted water. Drain and run under cold water.
- Shred cabbage, carrot. Throw in spinach and dice avocados.
- Mix soy sauce, rice wine vinegar, sugar and sesame oil. Taste and adjust as you go depending on how sweet / tangy you like it
- Mix mix mix. Serve immediately and garnish with sesame seeds.
