
Ingredients
- 6 x long seeded rolls
- 1kg fresh prawns- peeled and deveined
- Handful of chives chopped
- Juice and zest of 1 lime
- 1 avocado
- 2 x tablespoons of Kewie mayonnaise
- Salt and pepper
- Iceberg lettuce
Method
- Peel, devein and dice prawns (leave whole of you prefer them this way)
- Finely Chop half of iceberg lettuce
- Chop Handful of chives and slice avocado into thin slices
- Add chives, lemon zest and juice to prawns. Stir through Kewpie Mayo Season with salt and pepper.
- Cut rolls length ways and arrange sliced avocado, lettuce and a few spoonfuls of prawn mixture.
- Finish with a sprinkle of chives and enjoy :) Makes 6 rolls.
