
Ingredients
- 1/2 cup dashi (instant or home made)
- 2 Tbsp soy sauce
- 2 Tbsp mirin
- 2 tsp sugar
- 1 medium size white onion
- 500g chicken thighs
- 1 Tbsp sake
- 4 large eggs (room temperature)
- 1/4 cup green onion
- 1 cup cooked white rice
Method
- Cut chicken in 1 inch slices. Remove unwanted fat or ligaments.
- In a bowl, pour sake over chicken and set aside
- Chop onion in lengthwise strips and set aside
- In a bowl break. In a bowl, pour sake over chicken and set aside egg. Do not whisk but cut egg yolk by running fork over it in swirling motion
- Combine dashi, mirin, soy sauce and sugar. Stir until sugar is dissolved. Set aside.
- Heat a medium sized skillet that you can cover or frying pan. Fry onion until they 'sweat
- Pour sauce and simmer for 5 minutes
- Add chicken and simmer until cooked. Leave uncovered to reduce the liquid. In
- Add half the bowl of egg and cover for 3-5 minutes
- Add remaining egg and half the green onion and cook for another 3-5 minutes.
- Pour generously over bowl of rice
- Garnish with remaining spring onion.
