
Ingredients
- Valcom yellow curry paste
- Chicken breast
- Coconut milk
- Eggplant
- Chilli paste
- Fish sauce
- Brown sugar
Method
- Cool up the curry paste in oil until fragrant.
- Add half coconut milk and reduce to creamy consistency
- Add chicken and simmer for 5 minutes
- Add rest of coconut milk, some water, fish sauce, chilli paste and sugar.
- At the end add eggplant and cook until tender
- Serve with rice.
