
Ingredients
- 1/4 Cup Mirin
- 1/4 Cup Cooking Sake
- 1/2 Cup Salt Reduced Soy Sauce
- 1/4 Cup Sugar
- Chicken Thigh Fillets x 8
- 1 Large Garlic Glove Crushed
- 500g Jasmine Rice
- 2 Brunches Broccolini
- 1/4 Red Capsicum
- 2 Spring Onions Sliced
Method
- Combine soy sauce, mirin, sake, sugar and garlic in a bowl. Add chicken thighs and marinate for 30 minutes or overnight in the fridge.
- Strain the marinade into a small saucepan . Simmer over low heat for 10 minutes or until thickened.
- Cook the chicken thighs in a frying pan over med-high heat for 10 minutes, turning halfway through or until cooked through.
- Cook jasmine rice in the rice cooker.
- Steam the broccolini
- Divide steamed rice into bowls. Add chicken and broccoli. Spoon over sauce and garnish with spring onion and thinly sliced red capsium
