
Ingredients
- 3 spring onions, sliced
- 1 1/2 cups s/r flour
- 1 cup chicken stock
- 2 eggs, lightly whisked
- 2 cups shredded wombok
- 2 tblspn vegetable oil
- 2 tblspn tonkatsu sauce (or use worcesteshire or HP sauce)
- Kewpie mayonnaise
Method
- Place flour in a large bowl and make a well in the centre.
- Lightly whisk stock and eggs and add to flour.
- Add one cup of wombok and spring onion.
- Heat 2 tsp oil and cook pancakes, repeating with remaining batter.
- Brush one side of pancakes with sauce, spreading with the back of a spoon.
- Drizzle with Kewpie mayonnaise, and use a skewer to make a pattern through the mayonnaise.
