
Ingredients
- 680ml water
- 100g water chestnut starch
- 100g water chestnuts
- 80g brown sugar slab
- 80g yellow rock sugar
Method
- Dice the water chestnuts and set aside.
- Dissolve the brown sugar slab and yellow rock sugar in 680ml water in a pot on low heat.
- Pour 300ml sugar water from the pot and add into the water chestnut starch. Whisk until dissolved.
- Slowly add and sieve a small amount of the water chestnut starch liquid into the pot on low heat and keep mixing with the whisk. until the mixture become thick and smooth. It is important to keep it on low heat.
- Remove the pot from heat. Add diced water chestnuts. Mix well.
- Next step is to steam the cake. Spray the container with oil. Pour the mixture in, cover and steam for 45mins. To check it is cooked, insert a toothpick and it should be clean when you remove it.
- Let it cool and refrigerate overnight.
- Slice the cake into pieces and pan fry each side with low heat for 1 minutes.
