
Ingredients
- Obento Rice wine vinegar
- Brown sugar
- Lime
- Mint
- Carrot
- Fish sauce
- Barramundi
- Coriander
- Spring onion
- Shallots
- Peanuts
- Vegetable oil
- Endives
- Butter
- Basil
Method
- Dressing: Combine 1 tbs sugar, 1 tbs oil, juice from 2 limes, Obento rice wine vinegar and a table spoon of fish sauce together and set aside.
- Salad: Cut bunch of endives, 6 spring onions, 1 carrot and 4 tbs mint. Combine in bowl.
- Lightly dry handful of chopped peanuts until slightly toasted. Drain of oil and set aside. Fry 4 roughly cut shallots for 1 minute. Drain and set aside.
- Soften 2 tbs butter, add 1 tbs oil, 1 tbs of fresh cut basil and juice from 2 limes and combine. Coat Barramundi
- Cook Barramundi for 20-25mins on 150 degrees.
- Combine salad and salad dressing. Top with shallots and peanuts and serve.
- Take fish from oven and plate up
