Veggie-packed Japanese Curry

Ingredients
- Onion
- 2 mushrooms
- Carrot
- Zucchini
- Capsicum
- Potatoes
- Firm tofu
- 1 pack Japanese curry
- Rice (to serve)
- Spinach leaves (to serve) - optional

- S&B - S&B GOLDEN CURRY HOT 220G
Method
- Prep all vegetables and tofu to liking.
- Heat oil in large saucepan. On medium heat, cook onion until golden, then add mushrooms and continue cooking until brown. Then add all other vegetables and tofu, stirring frequently, and cook until soft.
- Add water to pan and heat until boiling. Then add curry pack and stir until all dissolved.
- Cook rice as desired and serve
