
Ingredients
- 2 cups sushi rice
- 6 tbsp Obento sushi seasoning
- 4-6 x yaki nori sheets
- 1 cucumber
- 1 carrot
- 1 avocado
- 200g jackfruit
- Mayonnaise
- Soy sauce
- Optional: pickled ginger and wasabi
Method
- Cook the 2 cups of sushi rice as per instructions. Once cooked mix sushi seasoning through then set aside to cool.
- Thinly slice cucumber, carrot and avocado.
- Once rice has cooled, cover a nori sheet with a thin layer leaving 1-2cm free at the top.
- Add desired sliced vegetables and/or jackfruit as a thin horizontal layer in the middle of the rice layer. Add a squeeze of mayonnaise over the top of this layer.
- Holding the bottom of the nori roll gently, tightly roll up and over your horizontal layer of ingredients careful not to squash or let them fall out. Roll up until you come almost to the top of the sheet.
- Wet the top 1-2cm of the nori roll you left free to stick the sheet back onto itself.
- Cut sushi roll in half or into slices.
- Dip in soy sauce, add a slice of pickled ginger and if you dare add a smear of wasabi, enjoy!
