
Ingredients
- Sushi rice
- Sushi rice vinegar
- Cucumber
- Avocado
- Kewpie mayonnaise
- Wasabi
- Yaki nori sheets
Method
- Cook sushi rice as per packet instructions, once cooked scant into a bowl, add a splash of sushi vinegar and stir until it stops steaming.
- Slice cucumbers into matchsticks. Slice and scoop out avocado into a bowl, add a generous squirt of kewpie and a pea size blob of wasabi (if you and your kids like a some heat), mix until combined
- Assemble sushi, lay out yaki nori sheets, spread a layer of rice. Top with avocado and lay some cucumber across. Roll.
- Slice into 3 or four rolls, and pop into lunch containers for the next day. Serve with a bit of extra kewpie and wasabi if you like.
