Method
- Prepare 1.5 cups of Obento Sushi Rice by washing it 4-5 times or until water is clear. Once clean, let the rice soak in water for 30 minutes.
- Once your rice has absorbed the water and become whiter in colour, put your rice in a pot with a thick base and add 1.5 cups of water. Wait until you see the rice boiling and immediately turn the heat down to a simmer. After exactly 8 minutes, turn the stove off and let it sit for 20 minutes.
- After 20 minutes your rice will be fluffy and ready to go. Place your rice into a large bowl and add 4.5 tbsp of Obento's Sushi Seasoning while gently moving the rice to ensure it is evenly coated with seasoning.
- Prepare your Obento Yaki Nori sushi sheets on a bamboo sushi matt with a bowl of water beside it. Place approximately 1/5 of your rice onto your sheet, spreading it evenly and leaving an empty strip to seal your roll.
- Cook your vegetarian chicken schnitzel in the oven at 220 degrees Celsius for 22 minutes, turning it over once.
- Once your vegetarian chicken schnitzel is ready, cut it up into thin strips and place in the centre of your rice on your Obento Yaki Nori sushi sheet.
- Cut your English cucumber in small strips, removing the cucumber seeds in the centre, this ensures your cucumber will be crunchy! Place this next to your vegetarian chicken schnitzel pieces.
- Drizzle roughly a tbsp of Kewpie Mayonnaise onto your vegetarian chicken schnitzel and cucumber.
- Using your bamboo matt, roll the ingredients together and seal the seaweed sheet using water with your fingers. Hold it firmly for a few seconds until the yaki nori sheet is secure. Repeat this process until all 5 rolls are complete!
- To make your spicy dipping sauce, add 1.5 tbsp of Kewpie Mayonnaise, two tsp of sriracha sauce, 1/2 tsp of tomato sauce, and a dash of paprika, into a small bowl and stir.
- Cut your sushi rolls into 8 small pieces and serve with Obento's Sushi & Sashimi Soy Sauce and your spicy dipping sauce!
