
Ingredients
- 1 cup sushi rice
- 3 tablespoon rice vinegar
- 4 sheets obento yaki nori
- Half medium cucumber sliced into thin strips
- 1 medium carrot sliced into thin strips
- 1 medium avocado sliced
Method
- Cook rice and rice vinegar in rice cooker.
- Slice all vegetables into thin slices
- Place 1 sheet obento yaki nori shiny side down onto bamboo mat.
- Spread rice evenly over obento yaki nori leaving 1cm free at the bottom. Arrange cucumber, carrot and avocado evenly across centre of rice.
- Lift the bamboo mat and roll over vegetables once and press down. Unroll and roll again towards uncovered end of nori to make a long roll. Seal roll with a little bit of water if needed. Repeat to make remaining rolls
- Use a sharp knife to slice into rolls and enjoy!!
