
Ingredients
- 1 cup white rice (cooked & chilled)
- 3 Large eggs (whisked)
- 1 Large brown onion (diced)
- 3 cloves garlic (minced)
- 3 green onions (thinly sliced)
- 2 ears of sweet corn (de-husked and nibletted)
- 1 head broccoli (cut into small florets)
- 1 red capsicum (de-seeded and finely diced)
- 2 large carrots (peeled & finely diced)
- 4 tbsp soy sauce
- 2 tbsp ABC Sweet Soy sauce (plus extra for drizzle)
- 1 tbsp sesame oil
- salt & black pepper
- 3 tbsp butter
Method
- Heat 1/2 tablespoon of butter in a large pan over medium high heat until melted. Add eggs, cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate.
- Add another 1 tablespoon butter to the pan and heat until melted. Add carrots, brown onion and garlic, and season with a generous pinch of salt and pepper. Sauté for about 5 minutes or until the onion and carrots are soft.
- Add diced capsicum, corn and broccoli florets, along with another 1 tbsp butter. Sauté for another 2-3 minutes.
- Increase heat to high, add in the remaining 1.5 tablespoons of butter, and stir until melted. Immediately add the pre-cooked rice, green onions, soy sauce and sweet soy sauce, stir until combined. Continue sautéing for an additional 3 minutes to fry the rice, stirring occasionally.
- Then add in the eggs and stir to combine. Remove from heat, and stir in the sesame oil until combined. Taste and season with extra soy sauce, if needed. Drizzle sweet soy on top, and voila!
