
Ingredients
- Valcom Massaman Curry Paste
- 1 tbsp olive oil
- 500g chicken breast, diced
- 400ml coconut milk
- 1 brown onion
- 1tsp tamarind paste
- 1tsp fish sauce
- 2 medium potato
- 3 stalks spinach, sliced
- 1 cup broccoli florets
Method
- Heat oil in frypan over low heat.
- Add onion and cook until browned. Add chicken and cook until browned.
- Add Massaman curry pasta, stiry through, and cook for 1 minute.
- Add coconut milk, tamarind paste, fish sauce and broccoli. Stir to combine and bring to a simmer for 5 minutes.
- Meanwhile, dice potato into 2cm chunks. Microwave potato in a glass bowl with 2tbsp water (covered with plastic wrap) for 5 minutes or until softened.
- Add potato and spinach to the curry, stir to comine, and simmer for a further 2 minutes.
- Serve with rice, and topped with chopped fresh coriander if desired.
