Ingredients
- Sushi Rice
- Obento Sushi Seasoning
- Rainbow Coleslaw
- Cucumber
- Edamame Beans
- Sesame Seeds
- Roasted Seaweed
- Soy Sauce
Method
- Add the rinsed Sushi Rice to a saucepan with water (use 3 parts water to 2 parts rice). Bring to a boil, then reduce the heat and cook, covered, until the rice is tender and all the water has been absorbed.
- Sprinkle 3 tbsp of Obento Sushi Seasoning to the cooked sushi rice. Using a wooden spatula, fold the sushi seasoning into the rice. Let the rice cool to room temperature.
- Julienne the cucumber.
- Thaw the edamame beans (if frozen) in a microwave for 1-2 minutes.
- Transfer the cooled sushi rice to a serving bowl. Top with the rainbow coleslaw, cucumber, edamame beans and sesame seeds.
- Serve with roasted seaweed and soy sauce. Enjoy!
