
Ingredients
- Sushi Rice
- Nori
- Carrot
- Cucumber
- Puffed Tofu
- Vegan Shrimp
- Avacado
- Soy Sauce to serve
Method
- Cook Sushi Rice in rice cooker and let cool.
- While rice is cooling, julienne vegetables of choice. I used avacado, carrot and cucumber.
- Place rice in nori, layer with vegetables and protein of choice. I alternated between vegan shrimp and puffed Tofu.
- Roll sushi and seal with water on finger.
- Cut Sushi to desired size.
