
Ingredients
- 300g block firm tofu roughly crumbled
- 1 carrot julienned
- 1 teaspoon ground turmeric
- 1 1/2 tablespoons Obento Sushi & Sushimi Soy Sauce
- 1 teaspoon Obento Rice Wine Vinegar
- 1 tablspoon Extra Virgin Olive Oil (or sesame oil) for frying tofu
- #1. 5 medium tomatoes roughly chopped
- #2. 2 teaspoons freshly chopped lemon thyme
- #3. 2 teaspoons freshly chopped oregano
- #4. 1 teaspoon dried basil leaves
- #5. 1 teaspoon dried oregano
- #6. 1/2 tablespoon dried sumac
- #7. 1/2 tablespoon Obento Rice Wine Vinegar
- #8. 3 tablespoons extra virgin olive oil
- #9. 1 teaspoon salt
- #10. 1/2 teaspoon pepper
- #11. 1 tablespoon brown rice syrup
- 6 crisp baby cos lettuce leaves
- sliced cucumber for garnish
- 1/4 cup white alfalfa sprouts for garnish
- 4 slices toasted sourdough bread (or alternative) with vegan butter or olive oil
Method
- In a baking dish combine ingredients #1 - #11 and bake in an oven preheated to 200 degrees - It will take around an hour to cook
- Just before tomatoes come out of the oven, in a heated frying pan with olive oil - add carrots until they are tender
- Add the crumbled tofu to the carrots and fry for approximately 5 minutes stirring occasionally
- Add the turmeric to the frying pan, Obento Sushi & Sushimi Soy Sauce, Obento Rice Wine Vinegar and stir for another minute
- While the tofu is cooking, prepare the toast and assemble onto two serving plates
- Divide the lettuce and cucumber onto the plates
- Serve out the scrambled tofu onto the plates either over the toast or on the side
- Remove the tomatoes from the oven and either place on top of the tofu or on the side along with the juice from the baking dish for extra flavour
- Garnish with alfalfa sprouts and it's ready to eat!
- This is a very simple and full proof version of scrambled tofu. Feel free to add chopped mushrooms and zucchini if you prefer more vegetables. This is a perfect hearty meal for the morning or afternoon. Tofu is a wonderful life-giving food rich in phytoestrogens. It is also an amazing chameleon--taking on whatever flavour you marinate it with.
- Once the dish is ready to eat, season with Obento Sushi & Sushimi Soy Sauce and Obento Rice Wine Vinegar for extra flavour, saltiness and tang!
