
Ingredients
- 300g vegan chicken (or can substitute with tofu)
- Sushi rice
- 2 tbsp Chinese black vinegar
- 5 tbsp soy sauce
- 2 tbsp brown sugar
- 4 tsp chilli oil
- 6 tbsp room temperature water
- 1 tbsp cornstarch
- 1 tsp minced ginger
- 1 tsp mined garlic
- Sesame oil (for cooking)
- 1 brown onion
- 1 red capsicum
- 1 carrot
- 1/2 head of broccoli
- Sichuan peppercorns
- Dried chillis
- 2 tbsp Shaoxing wine
Method
- Prepare your rice as per packet instructions.
- Prepare vegan chicken as per packet instructions.
- Combine sauce ingredients (vinegar, soy sauce, sugar, chilli oil, water, cornstarch, garlic and ginger) in a bowl.
- Roughly chop onion, broccoli, carrot and capsicum. Sauté in frying pan with sesame oil.
- After 5 minutes, add Shaoxing wine, vegan chicken, peppercorns and dried chillis to frying pan.
- Once the Shaoxing wine has evaporated, add the sauce ingredients to the frying pan. Stir occasionally until sauce reaches desired consistency.
- Serve with rice.
