
Ingredients
- Vegetables and Tofu½ cup of shredded zucchini ½ cup of sliced beans½ cup of sliced pumpkin ¼ cup of sliced hard tofu2 sprigs of curry leaves 1 red onion sliced
- For batter 2-3 tbsp of Valcom Authentic Thai Red Curry paste Pinch of baking powder Pinch of salt 1 cup of plain flour (or half cup of chickpea flour and half cup of plain flour)¾ cups of water (less or more)
- Dipping sauce3 tbsp heated Valcom Authentic Thail Red Curry Sauce ¼ Kewpie Mayonnaise sauce
Method
- In a big bowl - mix flours, beat in water and add in the Valcom Authentic Thai Red Curry Sauce
- Add all the vegetables, tofu and curry leaves into the flour curry mixture and mix well. If mixture is to runny, you can add more flour or too thick- add more water.
- Heat pan with oil till hot and scoop in a quarter cup of mixture Cook each side for approximately 3 - 4 mins
- For extra sauce, heat Valcom Red Curry Sauce slightly in bowl and let cool slightly, add mayonnaise and serve as extra dipping sauce
- Serve with rice and a fried egg.You can also serve with a sambal, I like to serve it with curry leaves sambal. This can be made with other vegetables that you may prefer
