
Ingredients
- 1 small white onion
- 4 tblsp peanuts
- 1 tblsp sesame seeds
- 430 gr tofu
- 6 tblsp Obento Soy & Sashimi Soy Sauce
- 3 tblsp lime juice
- 1/4 tsp chilli powder
- 1.5 tsp ginger powder
- 1 can (400 ml) coconut cream
- 350 ml vegetable stock
- 200 gr frozen green baby beans
- 400 gr Obento Udon Noodles
Method
- Toast peanuts and sesame seeds until light brown.
- Chop tofu into small cubes, put in an air fryer at 180 degrees for 10 min.
- Chop onion, place in a pot. Add coconut cream, stock, chilli, ginger, lime juice and Obento Soy & Sashimi Soy Sauce into the pot.
- Put the pot onto a medium flame, have beans and noodles ready to add into the pot.
- When the broth starts to simmer. Add frozen beans and simmer for a further 2 minutes.
- Add noodles into the pot, simmer for another 2 minutes.
- Start plating - split tofu and the pot contents between two bowls. Add toasted peanuts and sesame seeds.
