
Ingredients
- Coconut milk
- Turmeric
- Garlic
- Ginger
- Brown Onion
- Coriander
- Spring onion
- Peanuts
- Carrot
- Capsicum
- Butter Beans
Method
- Dice onion and cut carrot into half circles. Add to medium pan and sautee for 3 mins with olive oil
- Add the capsicum and sautee for 3 more mins
- Drain beans and add to pan.
- Add 2 cloves of diced garlic and a finger sized piece of ginger diced. Sautee for 2 mins
- Add 2 teaspoons of turmeric powder and stir til fragrant.
- Add can of coconut milk and simmer over low for 10 minutes.
- Garnish with lime, coriander, peanuts, and spring onion. Serve with rice.
