
Ingredients
- Kewpie mayonnaise
- 500g chicken breast
- 2 cups jasmine rice
- 2 teaspoons coconut oil
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 2 teaspoons honey
- 1 teaspoon crushed garlic
- 1 teaspoon crushed ginger
- 1 teaspoon sesame oil
- 2 zucchini
- 1 bunch broccolini
Method
- Prepare rice as per instructions and add coconut oil
- Combine soy, mirin, honey, sesame oil, garlic and ginger in a small bowl
- Slice chicken into 1cm thick pieces and add to pan along with sauce. Cook for 8 minutes or until cooked through and remove from heat
- Add vegetables to the pan with some oil and a dash of water. Steam fry until crisp
- Assemble rice, chicken and vegetables into a bowl. Garnish with Kewpie mayonnaise and sesame seeds
