
Ingredients
- 1/2 cup dried black beans
- 1 cup coconut milk
- 1/2 cup palm sugar
- pinch salt
Method
- Add dried black beans to 3 cups water in a medium sized saucepan and bring to the boil. Boil for 60mins. Set aside in same saucepan.
- In a seperate saucepan, add coconut milk, palm sugar and salt. Stirring constantly bring mixture up to a simmer over low heat. Simmer 5 minutes.
- Strain black beans and keep 1 cup of black bean water.
- Add black beans to coconut milk mixture and 1 cup of reserved black bean water. Turn heat up and bring to a boil. Milk will take on a purple colour. Remove from heat and check for sweetness. Add more palm sugar or bean water if too sweet.
- Ladle beans into bowls and fill with milk mixuture.
- Serve warm or at room temperature.
