
Ingredients
- 400g Mixed tomatoes
- 2 large cloves of garlic crushed
- 2 tbs olive oil
- 2 tbs Obento ponzu sauce
- Salt and pepper to taste
- Fresh basil to serve
- Crostini
Method
- Preheat oven to 220°C/200°C fan- forced. Line a large baking tray with baking paper.
- Combine tomatoes, garlic, oil and ponzu in a mixing bowl. Mix gently to coat the tomatoes.
- Place tomatoes on tray, season with salt and pepper.
- Roast for 15 minutes or until tomatoes begin to collapse. Serve on a plate finishing with fresh basil and crostini.
