
Ingredients
- 500g Pork Mince
- 200g mushrooms sliced
- 1/2 - 3/4 (depending on how tasty and spicy you like it) jar Valcom Tom Yum paste
- 3 garlic cloves minced
- 1 brown onion sliced
- 20g sesame oil
- 200g flat rice noodles
- 150g snow peas or green beans trimmed and cut into thirds
- 1 can Valcom sliced water chestnuts, drained
- 1 can Valcom bamboo shoots, drained
- Fried shallots and coriander to serve
Method
- Cook rice noodles as per packet instructions, drain and set aside
- Heat sesame oil in large nonstick wok over medium high heat
- Add onion and garlic and cook until soft and translucent. Roughly 5 minutes.
- Add pork mince until slightly browned, breaking apart with a wooden spoon.
- Add mushrooms, beans/snow peas and Tom yum paste and cook until mushrooms softened for roughly 5 minutes.
- Add water chestnuts, bamboo shoots and noodles and warm through. Ensure the flavour is stirred through all ingredients and add more paste if necessary. Careful not to go overboard as it has a pretty good kick to it!!
- Serve warm and top with coriander and fried shallots!… (Tom) YUMMY!!!
