
Ingredients
- 500g large banana prawns
- 150g squid rings
- 1 pack of fresh Thai rice noodles (for 1 or 2 people)
- 100-120 g valcom coconut milk
- ½ onion (cut into pieces)
- 2 tomato (cut into 8 pieces per each)
- 5 mushroom cups or brown mushroom (thick slice)
- 50 g enoki mushroom
- ½ corn ( cut into 2 cm long)
- 3 pieces of kaffir lime leaves
- 3 bird eye chilis (chopped)
- 2 teaspoon fish sauce
- 3 tablespoon valcom tom yum paste
- 1 lime
- #For the soup ingredients:
- prawns heads from the banana prawns
- 2 shallots (cut into pieces)
- 1 stalk lemongrass (lightly loose with hammer or the back of the knife)
- 1 carrot (cut into pieces)
- 700 ml chicken stock or water
Method
- Cut the prawns head without the shell, and then peel the banana prawns shell then clean the dirt on the back of the prawns.( or if for the presentation you can leave a few whole prawns with the shell on)
- Heat the pot with a medium heat, then add ½ tablespoon of vegetable oil then add the prawn heads for fried the prawn head until have the red oil coming out. And then add the shallot fried about 2 minutes, then add the lemongrass, carrot and the chicken stock or water then cook for 15-20 minutes, then drain the soup in the cooking pot then continue to cooking with the medium heat.
- And then add the tomato, mushroom cups, corns, lime leaves, onion, bird eye chilis and tom yum paste, then cover whit the lid let it boiled cook for 5-7 minutes.
- 4. And then add the banana prawns and squid rings into the soup cook about 5 minutes or until the prawns change red colour cooked. Then add the enoki mushroom, coconut milk and fish sauce for taste.
- The Thai rice noodles follow the package instruction for cook. And then add into the tom yum goong soup or set aside in the bowl and when the tom yum goong soup ready for server then pour into the cooked rice noodles.
- Juice the lime add half juice or more into the soup. Garnish with sliced red chili and coriander or chopped spring onion. Remover from heat and server.
