
Ingredients
- Pad Thai Sauce
- Pad Thai noodles
- Firm organic tofu
- Vegetables of your choice
- Peanuts
- Coriander
- Spring onions
- Lime juice
- Brown sugar
- Fish sauce
- Dried fried onion
- Sesame oil
Method
- Soak Pad Thai noodles in boiling water for 20 mins
- Roll tofu in salt and pepper and fry Until crispy in the sesame oil.
- Add Pad Thai sauce (1/2 bottle) to tofu and cook until aromatic.
- Add vegetables to the tofu pan and cook for 3-4 minutes.
- Add the drained noodles and cook on a high heat stirring regularly.
- Add lime juice, sugar and fish sauce and cook for 2 minutes stirring regularly.
- Plate up and garnish with spring onion, coriander, peanuts and dried fried onion.
- Eat and enjoy!
