
Ingredients
- 1 packet Obento soba noodles (180 grams)
- 150 grams button mushrooms
- 100 grams shiitake mushrooms
- 150 grams firm tofu
- 1 cup kale
- 3 cups vegetable stock
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- Sesame seed (optional)
- Spring onion (optional)
Method
- Cook Obento soba noodles according to instructions on package and set aside
- Pat dry tofu with paper towel and cut into cubes
- Heat olive oil in pan on medium heat and add sliced mushroom and tofu and cook for 6 minutes
- Add soy sauce and cook for further 2 minutes or until mushrooms are soft
- Add vegetable stock and bring to boil.
- Add prepared soba noodles and leave for 1 minute.
- Add kale and leave for 3 minutes
- Serve and add optional sesame seed and spring onion as garnish
