
Ingredients
- Slightly firm tofu -1 block
- Panko breadcrumbs -1 cup
- Golden curry mix medium hot -1/3 pack
- Plain flour 1/2 cup
- Soy sauce - 30ml
- Rice -1 cup
- Green shallot - 1/2 green stalk
- White and black sesame - Garnish
- Paprika -1/2 tsp
- Garlic powder - 1/2 tsp
- Salt - A pinch
- Canola oil - 50ml
- Kewpie Mayo - 30ml
Method
- Cup the tofu into thirds horizontally and marinate into 20ml of soy sauce
- Bring 200ml of water to a boil in a pot and dissolve the curry paste stirring well with a whisk. Let it reduce to your favourite consitency
- Cook 1 cup of rice through your preferred method.
- Mix the flour with the paprika, garlic powder and salt. Add a water and whisk until you achieve an egg-like consistency. Then pass your tofu through the batter.Once the tofu is fully coated pass it through the panko breadcrumbs. Feel free to repeat the step for a crispier outcome.
- Heat the oil to medium-high on a frying pan. Once the oil is hot carefully place the tofu in the pan. Once the tofu is crispy and golden on one side flip to the other side.
- Once the rice, the curry sauce and the tofu are ready is time to plate up. Start with one serve of rice, follow with the curry and place the tofu on top.Add the Kewpie mayo on a zigzag pattern and finish off with a sprinkle of sesame seeds and green shallot sliced on a 45 degree angle.
