
Ingredients
- Broccoli
- Carrots
- Onion
- Firm tofu
- Rice
- Sesame seeds (or garnish)
Method
- Cook rice in rice cooker as per packet instructions.
- Cut up all vegetables and tofu into bite sized chunks.
- Fry onion in saucepan until slightly translucent on medium heat.
- Add carrots in and fry them alongside the onions. Add a splash of water, put the lid on to soften the carrots, as this creates a 'steaming' effect.
- After about 2-3 min, add the broccoli in the saucepan and again another splash of water and put the lid on. Add splashes of water as you go to help cook the vegetables.
- Once the vegetables nearly reach your desired consistency (some like it soft, others like a bit of a bite), add the tofu into the pan.
- Add S&B Golden Curry block into the pan. Add a splash of water. Stir and break down curry blocks. Continuously add water until it reaches your desired curry sauce consistency.
- Serve up in bowls and sprinkle some sesame seeds for garnish!
