
Ingredients
- Valcom authentic Thai yellow curry paste
- EVOO
- Coconut milk
- Fresh beans
- Broccolini
- Goldband snapper
- Fish sauce
- Sugar
Method
- Stirfry half a jar valcom yellow curry paste with 2tbsp olive oil until fragrant (about 1 minute)
- Add 400ml coconut milk, a tsp of fish sauce and a tsp of sugar and simmer for 5 minutes or until sauce thickens.
- Add around 2 cups fresh or frozen veggies and cook for around 5 minutes or to you liking.
- Add fish (cubed or larger pieces) and cook for around 10 minutes.
- Serve with steamed rice and garnish with coriander.
