
Ingredients
- 500g lean pork mince
- 1 tbsp sesame oil
- 1 tsp Thai red curry paste
- 1 small red onion
- 1 tin Valcom bamboo shoots
- 220ml coconut milk
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 2 kaffir lime leaves
- Sliced cucumber, fresh lime and chopped coriander to serve
- Egg noodles
- 1 clove of garlic finely chopped
Method
- Heat the oil and fry the onion and garlic
- Add the pork mince and sauté until brown
- Add curry paste, lime leaves and coconut milk
- Add bamboo shoots, fish sauce, sugar and bring to the boil. Reduce to simmer. Cook for a further 10 mins.
- Whilst the mince is cooking, cook noodles as per instructions
- Assemble dish as per liking. Noodles can be mixed through the meat or served separately.
- Garnish with cucumber, coriander and a squeeze of lime! Delish!
