
Ingredients
- 50g panko breadcrumbs
- 165ml Valcom Coconut Milk
- 500g chicken mince
- 2 tbsp Thai red curry paste
- Zest of 1 lime
- 2 tbsp soy sauce
- 2 sheets puff pastry
- 1 egg yolk whisked
- sesame seeds (black, white or both).
- Sweet chilli sauce to serve.
Method
- Combine panko breadcrumbs with 90ml of coconut milk. Let stand for 2 to 3 minutes to soften. Then mix softened breadcrumbs with chicken, curry paste, lime zest and soy sauce. (add more coconut milk if mixture is too hard).
- Cut pastry sheet in half. Add 1/4 of chicken filling to centre of pastry. Roll pastry over filling, brush edge with egg yolk to form a roll. Cut into desired size, brush with egg and add sesame seeds. Repeat with remaining pastry and filling.
- Air fry at 180 degrees celcius for 20 minutes or until golden. Serve with sweet chilli sauce. (add spring onions if desired).
