
Ingredients
- Chicken drumsticks
- Thai green curry paste
- Coconut milk
- Bamboo shoots
- Wombok
- Eggplant
- Kaffir lime leaves
- Fish sauce
- Thai basil
Method
- Brown chicken with curry paste in hot pan
- Add water to cover, boil on high for 25 minutes
- Add lime leaves, coconut milk, bamboo shoots, fish sauce, wombok and eggplant cook for for 10 minutes (till soft)
- Stir through Thai basil and serve
