
Ingredients
- 500gms chicken thigh fillet, diced
- 400ml coconut cream
- 1cup green beans
- Dash of sesame oil
- 1 teaspoon of brown sugar
- 1 teaspoon fish sauce
- Half jar of Valcom Green Curry Paste
- I cup diced sweet potato
Method
- Gently stir fry Green curry paste in 2 tablespoons of vegetable oil until fragrant
- Add diced chicken over medium heat , add green beans and sweet potato cook for approx 10minutes
- Add fish sauce, sugar.. turn heat down to a simmer and add coconut cream.
- Continue on simmer for a further 10 minutes until sauce thinkens
- Remove from heat and serve with boiled rice. Add coriander for garnish
