
Ingredients
- 500 grms Chicken Strips
- Onions , garlic, capsicum
- carrot, snow peas, shallots
- herbs - coriander and spices ginger black pepper and a squeeze of fresh lemon
- 100 grams jasmine Rice
Method
- Cut chicken strips thinly and slice 1 onion and capsicum ( choose from all capsicum colours red green and yellow} into thin strips
- Add the chicken, sliced onion and chopped galic into heated oiled wok stiring until browned.
- stir in Valcom green curry paste and add some ginger spice, black pepper and fresh coriander, then stir in 1 can of coconut milk
- in a large pot boil water and add Jasmine rice on high heat for 10mins
- Add carrots snow peas and shallots to green curry in wokand stir in and then turn heat down to simmer
- drain and wash rice when rice is cooked and add to serving bowl
- scoop chicken green curry and vegetable over rice in bowl and add some fresh coriander and a squeeze of lemon over the top.
- Serve and enjoy a healthy and delicous Thai green chicken curry
