
Ingredients
- 450g firm white boneless fish fillets
- 1/4 cup cornflour
- 1 tablespoon fish sauce
- 1 egg beaten
- 1/2 cup chopped fresh coriander
- 3 teaspoons Valcom red curry paste
- 1 red chilli finely chopped
- 100g green beans sliced small
- 2 spring onions
- 1/2 cup oil
- Sweet chilli sauce to accompany
Method
- Blend the fish in a processor for 20 seconds until there are no lumps. Add the cornflour, fish sauce, egg, coriander, Valcom curry paste, and chilli. Mix for 10 more seconds. Place in a bowl and mix in the spring onions. With wet hands, roll the mixture into patties.
- Heat the oil in frying pan to medium heat. Cook patties until brown on both sides. Serve with chilli sauce.
