
Ingredients
- 1.5 kg whole chicken cut into small pieces
- 1 can of coconut milk
- I tsp garlic mince/ ginger mince
- Some fresh coriander
- 1 piece of lime( optional)
- 1 spoon of fish sauce
- Olive oil
Method
- Wash 1.5 kg whole chicken with plain flour and cut into small pieces and use kitchen tower to dry properly.
- Put 2 spoons of olive oil into the wok. and put chicken into the wok to fry until getting brown both sides.
- Take out chicken into a plate, put 1 spoon of olive oil into the wok and stir fry garlic and ginger until getting brown.
- Put half jail of red curry paste and stir fry 30 seconds than put 1 can of coconut milk.
- Pour 2 cups of water and 1 chicken stock , put chicken into the wok and boil.
- Put 1 spoon of fish sauce and 1 tsp of sugar boil 12 minutes, mix every 3 minutes.
- Put 1 bowl of cooked jasmine rice into a plate, put chicken around the rice and pour enough sauce, decorate with some coriander and 1 piece of lime.
