
Ingredients
- 3 chicken breasts cut into pieces
- 2 tablespoons of oil
- 1 red onion, finely chopped
- 2 finger sized pieces of ginger, sliced
- 1 red chilli
- 2 cups of green beans
- 10 shitake or oyster mushrooms
- 1 red capsicum
- Bunch of fresh basil
- Sauce:- 2/3 cup of coconut milk, 1.5 tablespoons of soy sauce, 3.5 tablespoons of fresh lime juice, 1 teaspoon of chilli flakes, 2 teaspoons of brown sugar, 2.5 tablespoons of fish sauce,.
- For serving:- Jasmine rice
Method
- Combine the sauce ingredients in a bowl.
- In a separate bowl, add the diced chicken and add 1/3rd of the sauce, mix and coat the chicken.
- Warm the frying pan to a medium heat. Add oil, chilli, ginger and garclic. Fry for 3 minutes.
- Add the chicken mixture and beans, and cook for a further 5 minutes, mixing in a further 1/3rd of the sauce.
- Add mushrooms and capsicum and simmer for a further 5 minutes. Add the remaining sauce during this period.
- Serve with rice, with chopped basil and chillis on top.
