
Ingredients
- 500 grams of Chicken breast
- 2 x white potatoes
- 2 x carrots
- 1 x sweet potato
- 1 x onion
- 1 x red chilli
- 1 x handful of coriander
- White rice
- 1 x Star Anise
- Olive oil
- 1 x 400mL of coconut milk
Method
- Cook rice as per packet instructions with one star anise and salt
- Cut chicken breast into strips and fry in olive oil until sealed. Set aside.
- On high heat put half a jar of Valcam Thai Yellow Curry Paste into a fry pan. Cook until fragrant.
- Add sliced onions, cook until translucent.
- Add chopped potatoes and half a tin of coconut milk and progressively add the rest as you cook. Cook for 5 minutes.
- Add chopped sweet potatoes. Cook for 5 minutes.
- Add chopped carrots. Cook for 5 minutes.
- Add sliced chilli and capsicum.
- Cook until all vegetables are tender and then add chicken.
- Lower heat and cook until flavours combine.
- Adjust with salt as necessary.
- Serve with rice and garnish with chopped coriander.
