
Ingredients
- Cooked sushi rice (2 cups)
- 2 tablespoons of rice wine vinager
- 1 tablespoon of sugar
- 1/4 teaspoon of salt
- 2 chicken thighs marinated overnight in teriyaki sauce and a clove of garlic
- Cucumber cut into strip's
- Japanese mayo
- Nori sheets for sushi
Method
- Place marinated chicken in air fryer and cook at 180 for 8 minutes. Let sit for 5 minutes to cool.
- Mix cooked rice with sugar, salt and rice wine vinager (while still warm)
- Lay out the nori sheets and spread out a cup of rice on top
- Place strips of cucumber an top of rice
- Slice cooled chicken and place on top of rice
- Drizzle Mayo over the top and roll into tight roll.
- Wait 5 minutes before cutting.
