
Ingredients
- 2 Salmon fillets
- Obento Teriyaki Marinade
- Sesame oil & seeds
- Vermicelli noodles
- Broccolini
- Pickled ginger
- Small piece of ginger
- 4 garlic cloves
- 4 cups of vegetable stock
- 4 shallots cut into 5cm pieces
- 8 fresh shiitake mushrooms
Method
- Poor obento teriyaki marinade over fillets, add 4 drops of sesame oil. Marinate for 6 hours or over night
- Heat pan to medium heat. Add olive oil & cook flesh side first & then turn to cook skin side down until crispy. Remove & rest on cooked vermicelli. Sprinkle with sesame seeds.
- Cool vermicelli as per package.
- Steam broccolini and add to plate.
- Wash & slice cucumber. Assemble as per photo.
- Add pickled ginger to side dish and assemble as per photo.
- For broth bring stock, 1 tablespoon of soy sauce. Ginger, garlic & shallots &mushrooms to boil then turn down. Simmer for ten minutes then turn off heat. Take mushrooms out, slice & return to broth. Place broth in serving bowls.
