
Ingredients
- 1/4 cup Obento Mirin Seasoning
- 1/4 cup Obento Sake
- 1/4 cup Soy sauce
- 500gm Chicken thigh or breast
- 2 cups (measured uncooked) jasmine rice
- 1 avocado
- 1/2 continental cucumber
- 2 ears of corn
- 1 cup Edamame beans shelled
- Kewpie mayonnaise plain or wasabi
- ABC Sweet soy sauce
- Crispy Spring Onion
Method
- Marinade: Mix equal parts mirin, sake and soy sauce together in small sauce pan. Bring to the boil then turn heat down to simmer and reduce marinade for about 10 minutes. Cool marinade before pouring approximately half of it over chicken. Save the other half of marinade for next time. Marinate chicken for a few hours or overnight in fridge.
- Cook chicken on barbecue or in frying pan.
- Cook jasmine rice, corn cobs and edamame using your usual method. For Edamame I buy the frozen shelled Edamame from coles and cook according to instructions on the packet: salted boiling water, add frozen Edamame and once water comes back up to boil, boil for 3 minutes before draining.
- Chop corn off cob. Chop cucumber & avocado into diced pieces
- Assemble bowls: Place rice in bowl first, then add corn, cucumber, avocado, edamame and chicken on top. Drizzle with kewpie mayonnaise (plain or wasabi if you like spice!) and sweet soy sauce. Sprinkle crispy fried onions over top.
