
Ingredients
- Obento sushi kit
- Kewpie mayonnaise
- 2 fresh avocados sliced
- 1 red capsicum sliced
- 2 spring onions sliced
- Black and white toasted sesame seeds
- 1 cup of kikkoman soy sauce
- 1/4 cup sake
- 2 Tbsp brown sugar
- 2 garlic cloves minced
- 1 Tbsp fresh ginger minced
- 1 kg free range chicken breast sliced
Method
- To make the teriyaki chicken sauce. In a small pot add 1/2 cup of the soy sauce, the mirin, brown sugar, garlic and ginger. Slightly simmer till the brown sugar melts.
- In a bowl add your teriyaki mixture to your chicken. Let rest for at least one hour or up to 12 hours in the fridge.
- Whilst the chicken in resting. It’s time to make the rice. Put the rice into a pot, rinse with cold water 2-3 times until clear. Drain away the water.
- Add 600ml of water into the pot of rinsed rice. Bring water to boil, lower the heat and let it simmer for 12-14 mins. When done, remove the pot from heat and let it stand covered for 5-10 mins.
- Remove rice from the pot and into a large bowl. Evenly sprinkle powdered sushi mix over the hot rice. Stir thoroughly and cool the rice. Divide into six portions.
- Whilst your rice is cooling. It’s time to cook your chicken. Using a fry pan. Add oil if need be. Cook through for approx 8-10 minutes and you’ll see the sauce starting to thicken. Set aside.
- Now your ready to make your inside out sushi rolls. Place a sushi mat on a clean surface with slats running horizontally to you. Place a nori sheet, shiny-side down, on the mat. Use wet hands to spread one-quarter of rice evenly over nori sheet. Sprinkle black and white sesame seeds evenly over rice. Cover with a large piece of plastic wrap.
- Carefully turn the rice and nori over so the nori faces up. Place the bamboo mat under the plastic wrap. Top the nori with your chicken, capsicum and avocado.
- Pick up the edge of the bamboo mat and plastic wrap with index finger and thumb. Place a finger over the filling to keep in place. Roll the mat tightly away from you, wrapping rice around the filling. Press roll gently and continue rolling forward to complete the roll. Gently press mat to shape and seal the roll, then remove it from mat and plastic. Repeat with remaining ingredients till you make six rolls.
- Use a sharp knife wiped with a damp cloth to cut each roll into your desired size.
- Serve in a bowl with the 1/2 soy sauce. Topped with kewpie mayonnaise and spring onion. Enjoy!
