
Ingredients
- 1 brown onion (chopped)
- 1 pink lady apple (grated)
- 1 large carrot (grated)
- 1 teaspoon of fresh ginger
- 500g chicken breast (diced)
- 40g bread crumbs
- 6 tablespoons mirin
- 2 tablespoons of soy sauce
- 1 tablespoon caster sugar
- 1 tablespoon rice wine vinegar
Method
- Preheat oven to 200C Fan Forced
- Blitz onion, apple, carrot, ginger, chicken and bread crumbs in a food processor
- Roll into small balls (makes roughly 30)
- Bake in oven for 15mins
- Meanwhile, simmer in a large frypan; mirin, soy sauce, castor sugar and rice wine vinegar over a hot stove for 2 minutes
- Add cooked chicken balls to mixture and heat thoroughly until glaze has coated the balls (roughly 2 minutes).
- Serve with fresh steamed veggies for a quick, easy, family tested and more importantly DELICIOUS meal
