
Ingredients
- Sushi Rice
- Rice wine vinegar
- Castor sugar
- Salt
- Silken Tofu
- Corn Starch
- Chicken fillet
- Teriyaki sauce
- Yaki Nori for Sushi seaweed sheets
- Sliced Cucumber
- Sliced Capsicum
- Sliced avocado
- Sliced Carrot
- Pickled ginger
- Sesame seeds
- Bean sprouts
- Wasabi
- Soy Sauce
Method
- Cook Rice
- Mix Rice Wine Vinegar, Sugar and Salt together and pour over cooked rice. Stir gently and allow to cool to room temperature.
- Slice the vegetables and cut Yaki Nori seaweed sheets into strips. Set aside.
- Dice chicken and wok fry over high heat until brown, then add teriyaki sauce and sprinkle sesame seeds. Set aside.
- Dice silken tofu into cubes. Gently coat with corn starch and immediately pan fry in hot oil until light brown. Set aside
- Combine all elements in a bowl, starting with rice, adding tofu and chicken, and then vegetables, seaweed strips, wasabi, ginger, sesame seeds and soy sauce to taste.
