Teriyaki Chicken and Avocado Sushi Bowl

Ingredients
- Chicken (marinated in teryaki sauce) (700g)
- Kewpie (hero of the dish)
- Carrot (spiralised - 2 carrots)
- Cucumber (spiralised - 1 cucumber)
- Sushi Rice Seasoning (3 tbsp per cup of rice)
- Sushi Rice (3 cups)
- 1 Avocado (or swap for avocado paste of not in season)
- Sesame Seeds (Optional)

- KEWPIE - KEWPIE MAYONNAISE 500G
- OBENTO - OBENTO SAUCE - SUSHI SEASONING
Method
- Cook the marinated chicken as per the instructions. Cook the sushi rice as per the instructions. Whilst the chicken and rice are cooking, prepare the avocado, carrot and cucumber.
- Once the rice is finished, add 3 tbsp of sushi seasoning for each cup of rice. Dish up 4 bowls of rice and spoon the chicken evenly between the 4 bowls.
- To finish, squirt a generous serve of Kewpie Mayonnaise over the top of the dish. Add the cucumber, carrot, avocado and sesame seeds to garnish. Add more Kewpie Mayonnaise to taste.
