
Ingredients
- 4 chicken theighs
- 3 tbs light soy
- 3 tbs mirin seasoning
- 3 tbs cooking saki
- 3 tbs water
- 1 tbs sunflower oil
Method
- Place all wet ingredients except oil into saucepan, bring to the boil and then simmer for 10 minutes until reduced by half
- Cook sauce to room temperature and then use to marinate chicken for minimum 20 minutes or up to 12 hours.
- Heat oil in pan on medium to high temperature. Drain excess marinade off chicken pieces and fry each side for 5 minutes or until cooked through.
- Take out chicken, add remaining marinade and cook until slightly thickened.
- Add back chicken pieces and warm through
- Serve with choice of green vegetables and rice.
